GALANGAL
Used in the Thai kitchen as well as other Southeast-Asian cuisines.
Galangal looks similar to ginger, but is more sour
and peppery.
Galangal is an aromatic stimulant,
carminative and stomachic. It is used against nausea, flatulence,
dyspepsia, rheumatism, catarrh and enteritis. It also possesses tonic
and antibacterial qualities and is used for these properties in
veterinary and homeopathic medicine.
From time to time I use galangel for smoothies (as an alternative for ginger).
It's warming root.
You
can use it for curries, dipping sauces, paste, tom yum soups (really
yuuuum), rendang, stir fries, prawns, scallops & squid, desserts,
puddings, tarte...
