Witchcraft = Cooking

Amazing tricolore pasta with goat cheese, sundried tomatoes, black olives & peppers.

The recipe comes from amazing blog: Kwestia Smaku. Polish cooking blog -  she cooks, he takes pictures (who's doing the dishes - i do not know). Unfortunately is only in polish.
It's worth to check it out anyway, just to find loads of inspirations and see all the gorgeous  food pictures.

So that's my pasta dish on the picture below, with a tiny bit of my soul. I added chilli and sundried tomatoes. So easy, so quick. So delicious!
Suitable for vegetarians :)

And that's the original yummy pictures from kwestiasmaku.com

My quick recipe translation:
For two portions:

• 2 spoons of olive oil + a little bit for serving
• 1 spoon of butter (i didn't use it)
• 1 small onion, cut into small pieces
• 1 i 1/2 red bell pepper, cut into 2 cm cubes
•  2 garlic cloves cut into small slices
• 8 black olives
• 2 handful of pasta, around 150 g
• 70 g goat cheese
• basil leaves
• salt & and fresh black pepper
<in my version chilli flakes, 5-7 sundried tomato, i also used more goat cheese & favourite herbs)

Preparations:
  • On a pan hit up olive oil and butter, add onion, pepper & garlic. Add salt and fried for for around 12-15mins. Add olives in the end. In the meantime boil the pasta in salty water.
  • Add pasta on the pan with veggies, stir and then add goat cheese and basil. Stir a little and add pepper, salt and olive oil to taste.
In my version: Just add all the herbs and seasoning you like.

From series 'Healthy Weirdo':
GALANGAL

Used in the Thai kitchen as well as other Southeast-Asian cuisines.

Galangal looks similar to ginger, but is more sour and peppery.

Galangal is an aromatic stimulant, carminative and stomachic. It is used against nausea, flatulence, dyspepsia, rheumatism, catarrh and enteritis. It also possesses tonic and antibacterial qualities and is used for these properties in veterinary and homeopathic medicine.

From time to time I use galangel for smoothies (as an alternative for ginger).
It's warming root.

You can use it for curries, dipping sauces, paste, tom yum soups (really yuuuum), rendang, stir fries, prawns, scallops & squid, desserts, puddings, tarte...
