' Orange quick gyoza' - Dumplings with lentils & pumpkin stuffing.
After so many times of making japanese gyoza dumpliks (usually with prawns or veg) it's time to try a little bit of European fusion.
When you already got the gyoza skins in a freezer - everything else it's about the stuffing.
I called them lazy or fake dumplings. No need of making proper dough. All you need to do it's open the freezer, wait 60mins (while you making the stuffing) and you can make you own dumplings and steam it, boil it, fried it, baked it etc.. You can make the pockets of pasta enclosing various fillings - cheese, mushrooms, spinach, seafood, meat fruits etc...
You can use you favourite recipe for armenian manti, polish pierogi, ukrainian varenyky, latvian or russian pelmeni, chinese wontons, Italian ravioli or tortellini (and so on).
For these ones you will need:
*1/4 small pumpkin
* half glass of red lentils
*3-4 galric cloves
* olive oil
* bread crumb
* paremesan (optional)
* olive oil - 2-3 spoons
*salt, pepper, chilli, favourite herbs)
Cook
half glass of red lentils and few pieces of pumpkins until soft. (or
baked pumpkin wrapped in foil in oven in 180 degrees for 30mins if you
have more time).
You have to allow more time for cooking the pumpkin.
Make purée.
Add 3 -4 cloves of garlic, a little bit of parmesan (if you have any in the fridge - optional)
and breadcrumbs. Then your favourite herbs, pepper, sweet paprika, chilli & salt.
Fold the dumplings.
Here is a movie about how to fold Japanese dumplings.
Or you can check east european way of making them - here.
I'm using this same way of steaming/frying as the first video shows.
I put all the dumplings on hot pan and i pour 1cm of water, cover the pun and set up the time for4-5 mins - after this time whole water should be absorbed by dumplings. The I pour 1-2 spoons of oil and cover it again for 2-3 mins until they get crunchy.
Instead of sesame oil - perfect for Chinese and Japanese dishes - this time I use virgin olive oil.
That's how gyoza skins look like. You can get it very cheap in thai shops and big markets. Pack of hundred cost around £1.50-2.00
I'm passionate about this little nom nom snack so you will find loads of similiar recipes here.
More inspirations here.
Good luck.
